Description
Colby resembles cheddar in look, texture, and taste. It is a dry cheese, slightly crumbly, that is orange in color and sharp in taste. The difference is that colby does not take as long to age before the sharp taste is achieved. Colby is combined with creamy, mild Monterey jack cheese, which tends to remind the taste buds of a light Swiss cheese in that it has a unique taste but remains subtle. The result of combining the two is a delicious sharp cheese that melts evenly and maintains its smooth, even texture.
